Healthy Mango and Coconut Mousse
A light, refreshing, and healthy mousse with the sweetness of mango and the creaminess of coconut. A perfect dessert to enjoy after a lovely dinner. No stress! It's quite easy to prepare and your friends and family will love it.

2 ripe mangoes

1 can of coconut milk (400 ml)

2 tablespoons of honey

1 teaspoon of vanilla extract

4 gelatin leaves

Coconut flakes and fresh mint leaves for garnish

Soak the gelatin leaves in cold water for about 5 minutes.

Peel the mangoes and cut them into pieces. Put them in a blender.

Add the coconut milk, honey, and vanilla extract to the blender and blend until smooth puree.

Heat a small amount of the mango-coconut mixture in a saucepan. Squeeze out the gelatin leaves and dissolve them in the warm mixture.

Add the gelatin mixture to the rest of the mango-coconut mixture and blend briefly.

Divide the mousse into four glasses and refrigerate for at least 3 hours to set.

Garnish with coconut flakes and fresh mint leaves just before serving. You have now created a beautiful and flavorful dessert.
