Vegetarian Lasagna with Zucchini and Ricotta

Preheat the oven to 200 degrees Celsius.

Slice the zucchinis into thin slices and chop the onion and garlic into small pieces.

Heat a little olive oil in a pan and sauté the onion and garlic until soft.

Add the zucchini and sauté for a few minutes.

Add the tomato sauce and let it simmer for about 10 minutes.

Season with salt and pepper.

Start with a layer of sauce on the bottom of a baking dish. Place a layer of lasagna sheets on top, then a layer of ricotta, and then another layer of sauce. Repeat until all ingredients are used up, but end with a layer of sauce.

Bake the lasagna in the oven for about 30 minutes, or until the top is nicely golden brown.
