  • large red bell peppers
  • cup cooked quinoa
  • can black beans, rinsed and drained
  • small onion, finely chopped
  • cloves garlic, minced
  • cup corn
  • cup shredded cheddar cheese
  • teaspoons cumin
  • teaspoon chili flakes
  • tablespoons olive oil
  •  Salt and pepper to taste

Instructions

  1. 1 Preheat the oven to 200 degrees Celsius.
  2. 2 Rinse the peppers and cut off the tops. Remove the seeds and white parts inside.
