Aromatic Roasted Pumpkin Soup
A delicious, warming pumpkin soup packed with flavor from the roasted pumpkin. This soup is perfect for a cozy night at home. No stress, this recipe is super easy to follow, even if you've never made soup before!
Ingredients

1 medium organic pumpkin (about 1kg)

2 medium onions

4 cloves of garlic

1 liter vegetable broth

1 teaspoon turmeric

1 teaspoon paprika powder

2 tablespoons olive oil

Salt and pepper to taste

4 sprigs of fresh thyme

Pumpkin seeds and fresh parsley for topping

Preheat the oven to 200 degrees Celsius.

Cut the pumpkin in half, remove the seeds, and cut into pieces. Place them on a baking sheet.

Peel and chop the onions and garlic. Add them to the baking sheet.

Drizzle the vegetables with olive oil, turmeric, paprika powder, salt, and pepper. Mix well to ensure everything is well coated.

Roast the vegetables in the oven for about 30 minutes until soft and lightly caramelized.

Remove the vegetables from the oven and transfer them to a soup pot. Add the vegetable broth and thyme.

Let the mixture simmer for about 20 minutes, or until the vegetables are completely soft.

Use an immersion blender to puree the soup until smooth. Taste and add more salt and pepper if needed.
