  • medium organic pumpkin (about 1kg)
  • medium onions
  • cloves of garlic
  • liter vegetable broth
  • teaspoon turmeric
  • teaspoon paprika powder
  • tablespoons olive oil
  •  Salt and pepper to taste
  • sprigs of fresh thyme
  •  Pumpkin seeds and fresh parsley for topping

Instructions

  1. 1 Preheat the oven to 200 degrees Celsius.
  2. 2 Cut the pumpkin in half, remove the seeds, and cut into pieces. Place them on a baking sheet.
  3. 3 Peel and chop the onions and garlic. Add them to the baking sheet.
  4. 4 Drizzle the vegetables with olive oil, turmeric, paprika powder, salt, and pepper. Mix well to ensure everything is well coated.
  5. 5 Roast the vegetables in the oven for about 30 minutes until soft and lightly caramelized.
  6. 6 Remove the vegetables from the oven and transfer them to a soup pot. Add the vegetable broth and thyme.
