Asian Noodles with Crunchy Vegetables and Peanut Sauce
These Asian noodles with homemade peanut sauce are a true treat. Delicious with crunchy vegetables and tofu, a perfect balance of savory, sweet, and umami. And the best part? You can have it on the table within half an hour. Perfect for a weekday evening!
Ingredients

200 grams of thickly sliced tofu

200 grams of noodles

1 red bell pepper

1 zucchini

Handful of sugar snaps

For the peanut sauce:

2 tablespoons of peanut butter

1 teaspoon of soy sauce

2 teaspoons of maple syrup

1 clove of garlic

Juice of 1/2 lime

1/2 teaspoon of chili flakes
Instructions

Prepare the noodles according to the instructions on the package.

Cut the tofu into cubes and fry them until golden brown in a large pan.

Meanwhile, cut the vegetables into strips and add them to the pan.

Make the peanut sauce by blending all the ingredients in a blender until smooth. Add some water if needed to thin out the sauce.

Drain the noodles and add them to the pan with the vegetables and tofu. Pour the peanut sauce over it and stir well.
