Broccoli Soup with Crunchy Croutons and Smoked Salmon
A heartwarming broccoli soup, complemented with crunchy croutons and delicious strips of smoked salmon. This dish is packed with green vegetables and healthy fats, while being light and filling - perfect for a midday lunch!
Ingredients

1 large broccoli, cut into florets

1 onion, finely chopped

2 cloves of garlic, finely chopped

1 liter vegetable broth

200 grams smoked salmon, sliced

4 slices of whole wheat bread, cubed

2 tablespoons olive oil

pepper and salt to taste

Heat a large pan over medium heat and add the olive oil.

Add the onion and garlic and sauté until soft, about 5 minutes. No rush, just let them simmer gently!

Add the broccoli florets and vegetable broth. Bring to a boil and let simmer for about 15 minutes until the broccoli is tender.

Meanwhile, toast the bread cubes in a hot oven (180 degrees) or in a skillet with some olive oil until golden brown and crispy.

Puree the soup with an immersion blender until smooth. Season with pepper and salt to taste.

Divide the soup into four bowls, place the smoked salmon in the middle, and sprinkle the croutons on top. Voilà, a wonderful lunch is ready to enjoy!
