Ingredients

  • large broccoli, cut into florets
  • onion, finely chopped
  • cloves of garlic, finely chopped
  • liter vegetable broth
  • 200 grams smoked salmon, sliced
  • slices of whole wheat bread, cubed
  • tablespoons olive oil
  •  pepper and salt to taste

Instructions

  1. 1 Heat a large pan over medium heat and add the olive oil.
  2. 2 Add the onion and garlic and sauté until soft, about 5 minutes. No rush, just let them simmer gently!
  3. 3 Add the broccoli florets and vegetable broth. Bring to a boil and let simmer for about 15 minutes until the broccoli is tender.
  4. 4 Meanwhile, toast the bread cubes in a hot oven (180 degrees) or in a skillet with some olive oil until golden brown and crispy.
  5. 5 Puree the soup with an immersion blender until smooth. Season with pepper and salt to taste.
  6. 6 Divide the soup into four bowls, place the smoked salmon in the middle, and sprinkle the croutons on top. Voilà, a wonderful lunch is ready to enjoy!
