Cheerful Vegan Pad Thai
This delicious vegan pad thai is packed with fresh vegetables, crispy tofu, and tasty peanuts. It's a colorful meal that truly bursts with flavor, and it's much easier to make than you might think. Perfect for a weeknight dinner!

200 grams rice noodles

200 grams tofu, cubed

1 red bell pepper, thinly sliced

200 grams bean sprouts

2 carrots, julienned

4 spring onions, finely chopped

2 cloves of garlic, finely chopped

Peanuts for garnish

Fresh coriander for garnish

For the sauce:

3 tablespoons soy sauce

2 tablespoons peanut butter

1 tablespoon agave syrup

Juice of 1 lime

Prepare the rice noodles according to the package instructions. Drain and set aside.

Fry the tofu in a little oil until golden brown all around. Then add the bell pepper, bean sprouts, carrots, spring onions, and garlic and stir-fry for a few more minutes.

Meanwhile, mix the ingredients for the sauce in a bowl. Add the sauce to the pan and mix well.

Add the noodles to the pan and mix everything together.

Serve the pad thai in bowls, garnish with peanuts and fresh coriander, and enjoy!
