Ingredients

  • 200 grams rice noodles
  • 200 grams tofu, cubed
  • red bell pepper, thinly sliced
  • 200 grams bean sprouts
  • carrots, julienned
  • spring onions, finely chopped
  • cloves of garlic, finely chopped
  •  Peanuts for garnish
  •  Fresh coriander for garnish
  •  For the sauce:
  • tablespoons soy sauce
  • tablespoons peanut butter
  • tablespoon agave syrup
  •  Juice of 1 lime

Instructions

  1. 1 Prepare the rice noodles according to the package instructions. Drain and set aside.
  2. 2 Fry the tofu in a little oil until golden brown all around. Then add the bell pepper, bean sprouts, carrots, spring onions, and garlic and stir-fry for a few more minutes.
  3. 3 Meanwhile, mix the ingredients for the sauce in a bowl. Add the sauce to the pan and mix well.
  4. 4 Add the noodles to the pan and mix everything together.
  5. 5 Serve the pad thai in bowls, garnish with peanuts and fresh coriander, and enjoy!
