Chef's Special: Cod on a Bed of Couscous with Raisins

Ingredients

  • cod fillets
  • 200 grams couscous
  • 50 grams raisins
  • spring onions, finely chopped
  • lemon
  • tablespoons olive oil
  •  Salt and pepper to taste

Instructions

  1. 1 Preheat the oven to 200 degrees Celsius.
  2. 2 Place the cod fillets on a lined baking sheet and drizzle with half of the olive oil. Season with salt and pepper.
  3. 3 Bake the cod in the oven for 15-20 minutes, or until cooked through.
  4. 4 Meanwhile, place the couscous and raisins in a bowl. Pour over 200 ml boiling water, cover and let sit for 5 minutes.
  5. 5 Add the spring onions, the remaining olive oil, and the juice of one lemon to the couscous. Stir well and season with salt and pepper.
  6. 6 Serve the cod on a bed of the couscous. Enjoy!
