Chef's Special: Cod on a Bed of Couscous with Raisins
This delicious Chef's Special is a favorite in my kitchen. It combines the delicate taste of cod with the sweetness of raisins and the savory flavor of couscous. It is a healthy, flavorful meal that is quick and easy to prepare. No stress! This is a great meal to share with friends and family.

4 cod fillets

200 grams couscous

50 grams raisins

4 spring onions, finely chopped

1 lemon

4 tablespoons olive oil

Salt and pepper to taste

Preheat the oven to 200 degrees Celsius.

Place the cod fillets on a lined baking sheet and drizzle with half of the olive oil. Season with salt and pepper.

Bake the cod in the oven for 15-20 minutes, or until cooked through.

Meanwhile, place the couscous and raisins in a bowl. Pour over 200 ml boiling water, cover and let sit for 5 minutes.

Add the spring onions, the remaining olive oil, and the juice of one lemon to the couscous. Stir well and season with salt and pepper.

Serve the cod on a bed of the couscous. Enjoy!
