Preheat the oven to 200 degrees.

Cut the zucchinis and bell peppers into cubes and spread on a baking sheet. Drizzle with 1 tablespoon of olive oil, salt, and pepper. Roast in the oven for 20 minutes.

Meanwhile, cook the orzo according to the instructions on the package.

Heat 1 tablespoon of olive oil in a skillet and brown the chicken breasts. Remove from the pan and set aside.
