Preheat the oven to 200 degrees Celsius.

Season the duck breasts with salt and pepper.

Heat 1 tablespoon of olive oil in a pan and sear the duck breasts on high heat until golden brown on both sides. Then place them in the oven for 10 minutes.

Meanwhile, peel and cut the parsnips into pieces. Toss them with the remaining olive oil and honey, and roast them in the oven until golden brown and crispy.
