Rinse the quinoa thoroughly under running water. Then soak the quinoa in a large amount of water overnight.

Drain the quinoa and place it in a blender. Add the eggs, almond milk, vanilla extract, baking powder, and salt. Blend until smooth batter forms.

Heat a little coconut oil in a frying pan. Spoon a tablespoon of batter into the pan and cook the pancake over medium heat until the bottom is golden brown. Flip and cook the other side. Repeat with the remaining batter.
