Chef's Special: Grilled Lamb Chops with Couscous and Roasted Pumpkin

200 grams couscous

400 grams pumpkin cubes

handful of fresh mint leaves

Preheat the oven to 200 degrees Celsius. Place the pumpkin cubes on a baking sheet, drizzle with olive oil, salt and pepper, and roast in the oven for 20 minutes.

Meanwhile, mix the paprika powder, salt, pepper, and olive oil in a bowl. Rub the lamb chops with the mixture and set aside.

Prepare the couscous according to the instructions on the package and set aside.

Heat a grill pan over high heat. Grill the lamb chops for 2-3 minutes on each side, depending on desired doneness. Let the meat rest for 5 minutes before serving.

Mix the roasted pumpkin into the couscous, add the lemon juice, and stir well.
