Chef's Special: Grilled Steak with Sweet Potato Fries and Blanched Vegetables

4 steaks, about 200 grams each

4 large sweet potatoes, peeled and cut into fries

2 tablespoons olive oil

Salt and pepper to taste

1 bunch of broccoli, cut into florets

1 red bell pepper, sliced into strips

Preheat the oven to 200 degrees Celsius and line a baking sheet with parchment paper.

Toss the sweet potato fries with olive oil and season with salt and pepper. Spread the fries evenly on the baking sheet and bake for 25-30 minutes in the oven, or until golden brown and crispy.

While the fries are baking, heat a grill pan over high heat. Season the steaks with salt and pepper and grill for 3-4 minutes on each side for medium-rare, or to your desired doneness. Remove from the grill and let rest for 5 minutes.

Meanwhile, blanch the broccoli florets and bell pepper strips in boiling water for 2-3 minutes, or until bright green and crisp. Drain and rinse under cold water to stop the cooking process.
