Ingredients

  • 400 grams chicken breast
  • 200 grams couscous
  • red bell pepper
  • zucchini
  • carrot
  • tablespoons olive oil
  • teaspoon turmeric
  • teaspoon cumin
  • teaspoon cinnamon
  • 50 grams raisins
  •  Salt and pepper to taste
  •  Fresh coriander for garnish

Instructions

  1. 1 Cut the chicken breast into cubes and marinate with turmeric, cumin, cinnamon, pepper, salt, and a tablespoon of olive oil. Let it marinate for at least 30 minutes.
  2. 2 Meanwhile, dice the bell pepper, zucchini, and carrot.
  3. 3 Heat the remaining olive oil in a large pan and cook the chicken until golden brown.
  4. 4 Add the diced vegetables and cook until soft.
  5. 5 Add the couscous and raisins, along with 400 ml of water. Stir well and reduce the heat.
  6. 6 Cover the pan and let it simmer gently for 10 minutes until the couscous is cooked.
