Chef's Special: Roasted Eggplant with Feta and Pomegranate

2 large eggplants

200 grams feta cheese

1 pomegranate

Preheat the oven to 200 degrees Celsius.

Cut the eggplants in half lengthwise and make diamond-shaped incisions in the flesh with a knife. Be careful not to cut through the skin!

Drizzle some olive oil over the eggplants and sprinkle with salt and pepper. This adds extra flavor.

Place the eggplants cut side down on a baking sheet and roast them in the oven for 30 minutes.

Remove the eggplants from the oven and place them on a serving platter.
