Chef's Special: Roasted Salmon with Quinoa and Roasted Carrot
A delicious and nutritious main course that is easy to make, but impressive enough to serve to guests. The salmon is perfectly roasted and served on a bed of quinoa with a hint of lemon and fresh herbs. Accompanied by a side of roasted carrots with honey and thyme for a sweet and savory touch. Enjoy!

4 salmon fillets

200 g quinoa

8 medium carrots

2 tablespoons olive oil

2 tablespoons honey

1 teaspoon thyme

1 lemon

Fresh herbs (such as parsley or dill)

Salt and pepper to season

Preheat the oven to 200 degrees Celsius.

Place the salmon fillets on a foil-lined baking sheet. Season with salt and pepper and set aside.

Peel the carrots and cut into sticks. Toss with olive oil, honey, and thyme and spread out on a second baking sheet.

Place the salmon and carrots in the oven. Roast the salmon for 12-15 minutes and the carrots for 20-25 minutes, until tender and golden brown.

Meanwhile, cook the quinoa according to the package instructions. Once cooked, stir in the juice of half a lemon and some fresh herbs.
