Chef's Special: Stuffed Eggplant with Chicken and Quinoa
These stuffed eggplants are not only a feast for the eyes, but also incredibly delicious. The combination of eggplant, chicken, and quinoa makes for a flavorful and nutritious dish. A true chef's special that will surely impress your guests!

2 eggplants

300 g chicken breast

200 g quinoa

1 red bell pepper

2 cloves of garlic

2 tbsp olive oil

1 tsp paprika powder

Salt and pepper to taste

Fresh parsley for garnish

Preheat the oven to 200 degrees Celsius.

Cut the eggplants in half and scoop out the flesh with a spoon. Place the hollowed-out eggplants on a baking sheet lined with parchment paper.

Dice the chicken breast, bell pepper, onion, and garlic.

Heat the olive oil in a pan and sauté the chicken breast until golden brown. Add the diced vegetables and cook until softened.

Meanwhile, cook the quinoa according to the package instructions.

Add the cooked quinoa to the chicken-vegetable mixture. Season with paprika powder, salt, and pepper.
