  • red bell pepper

  • tsp paprika powder
  •  Salt and pepper to taste
  •  Fresh parsley for garnish

Instructions

  1. 1 Preheat the oven to 200 degrees Celsius.
  2. 2 Cut the eggplants in half and scoop out the flesh with a spoon. Place the hollowed-out eggplants on a baking sheet lined with parchment paper.
  3. 3 Dice the chicken breast, bell pepper, onion, and garlic.
  4. 4 Heat the olive oil in a pan and sauté the chicken breast until golden brown. Add the diced vegetables and cook until softened.
