Chef's Special: Stuffed Peppers with Quinoa and Feta Cheese

4 large red peppers

200 grams quinoa

200 grams feta cheese

1 onion, finely chopped

2 cloves of garlic, finely chopped

300 grams cherry tomatoes, halved

1 tablespoon olive oil

2 teaspoons dried oregano

Salt and pepper to taste

Handful of fresh basil, finely chopped

Preheat the oven to 200 degrees Celsius.

Cook the quinoa according to the instructions on the package and set aside.

Cut the tops off the peppers and remove the seeds and membranes.

Heat the olive oil in a pan and sauté the onion and garlic until translucent.

Add the cherry tomatoes, oregano, salt, and pepper and simmer for 5 minutes.
