Chef's Special: Tender Chicken Breast with a Twist of Orange and Thyme

200 g quinoa

1 red bell pepper

1 zucchini

Instructions

Preheat the oven to 200 degrees Celsius.

Dice the zucchini, bell pepper, and red onion and place them on a baking sheet. Drizzle with olive oil, salt, and pepper.

Roast the vegetables in the oven for 20 minutes.

While the vegetables are roasting, cook the quinoa according to the instructions on the package.

Season the chicken breasts with salt and pepper. Heat some olive oil in a pan and brown the chicken breasts on both sides.
