Chickpea Curry with Orange Juice and Spinach
A warm, nutritious and healthy recipe full of plant-based proteins and rich flavors. Perfect for a cozy dinner on a cold evening. The orange juice adds a light sweetness that balances perfectly with the spicy curry.
Ingredients

1 can of chickpeas

2 handfuls of fresh spinach

2 cloves of garlic

1 large onion

2 tablespoons of curry powder

1 tablespoon of olive oil

Juice of 1 large orange

Salt to taste

Optional: sliced almonds for garnish
Instructions

Heat the olive oil in a large pan.

Add the chopped onion and pressed garlic and cook until soft.

Add the curry powder and stir well to release the flavors.

Add the chickpeas and orange juice, stir well and cover the pan. Let it simmer for 10-15 minutes.

Add the spinach and stir until wilted. It will be just fine!

Taste and add salt to taste.
