Ingredients

  • can of chickpeas
  • handfuls of fresh spinach
  • cloves of garlic
  • large onion
  • tablespoons of curry powder
  • tablespoon of olive oil
  •  Juice of 1 large orange
  •  Salt to taste
  •  Optional: sliced almonds for garnish

Instructions

  1. 1 Heat the olive oil in a large pan.
  2. 2 Add the chopped onion and pressed garlic and cook until soft.
  3. 3 Add the curry powder and stir well to release the flavors.
  4. 4 Add the chickpeas and orange juice, stir well and cover the pan. Let it simmer for 10-15 minutes.
  5. 5 Add the spinach and stir until wilted. It will be just fine!
  6. 6 Taste and add salt to taste.
