Ingredients
2 tablespoons olive oil
1 onion, finely chopped
2 stalks of celery, finely chopped
2 carrots, diced
2 cloves of garlic, minced
1 zucchini, diced
400 grams canned diced tomatoes
1 liter vegetable broth
400 grams mixed beans, rinsed and drained
100 grams pasta of your choice
Handful of fresh basil, finely chopped
Salt and pepper to taste
Parmesan cheese for serving

Instructions
1Heat the olive oil in a large pan over medium heat.
2Add the onion, celery, carrots, and garlic and sauté for 5 minutes until soft.
3Add the zucchini and diced tomatoes and stir everything together.
4Add the vegetable broth and bring to a boil. Let it simmer for 20 minutes.
5Add the beans and pasta and cook for another 10 minutes, or until the pasta is cooked.
6Stir in the fresh basil and season with salt and pepper.
7Serve the soup in bowls and sprinkle some Parmesan cheese on top. Enjoy!
