Classic Italian Minestrone Soup
This Classic Italian Minestrone Soup is a beautiful mix of vegetables, beans, and pasta. It's a perfect meal soup that you can serve all year round. Plus, you can endlessly vary the ingredients, depending on what you have at home or what the season has to offer.
Ingredients

2 tablespoons olive oil

1 onion, finely chopped

2 stalks of celery, finely chopped

2 carrots, diced

2 cloves of garlic, minced

1 zucchini, diced

400 grams canned diced tomatoes

1 liter vegetable broth

400 grams mixed beans, rinsed and drained

100 grams pasta of your choice

Handful of fresh basil, finely chopped

Salt and pepper to taste

Parmesan cheese for serving

Heat the olive oil in a large pan over medium heat.

Add the onion, celery, carrots, and garlic and sauté for 5 minutes until soft.

Add the zucchini and diced tomatoes and stir everything together.

Add the vegetable broth and bring to a boil. Let it simmer for 20 minutes.

Add the beans and pasta and cook for another 10 minutes, or until the pasta is cooked.

Stir in the fresh basil and season with salt and pepper.
