Ingredients

  • tablespoons olive oil
  • onion, finely chopped
  • stalks of celery, finely chopped
  • carrots, diced
  • cloves of garlic, minced
  • zucchini, diced
  • 400 grams canned diced tomatoes
  • liter vegetable broth
  • 400 grams mixed beans, rinsed and drained
  • 100 grams pasta of your choice
  •  Handful of fresh basil, finely chopped
  •  Salt and pepper to taste
  •  Parmesan cheese for serving

Instructions

  1. 1 Heat the olive oil in a large pan over medium heat.
  2. 2 Add the onion, celery, carrots, and garlic and sauté for 5 minutes until soft.
  3. 3 Add the zucchini and diced tomatoes and stir everything together.
  4. 4 Add the vegetable broth and bring to a boil. Let it simmer for 20 minutes.
  5. 5 Add the beans and pasta and cook for another 10 minutes, or until the pasta is cooked.
