Ingredients

  • 200 g couscous
  • red bell pepper
  • yellow bell pepper
  • zucchinis
  • eggplant
  • pack of halloumi
  • tablespoons of olive oil
  • lemon
  •  Handful of fresh mint
  •  Handful of fresh parsley
  •  Salt and pepper to taste

Instructions

  1. 1 Preheat the grill to high.
  2. 2 Slice the bell peppers, zucchinis, and eggplant into thin slices. Brush them with a little olive oil and season with salt and pepper.
  3. 3 Grill the vegetables for about 10 minutes, or until they are soft and slightly charred. Flip them halfway through.
  4. 4 While the vegetables are grilling, prepare the couscous according to the package instructions. At the end, add the zest and juice of the lemon, plus the chopped mint and parsley. Stir well.
  5. 5 Slice the halloumi and grill for a few minutes on each side, until golden brown and crispy.
  6. 6 Mix the grilled vegetables into the couscous and serve with the halloumi. Enjoy!
