Creamy Broccoli Pesto Pasta
A delicious, nutritious, and light dish, perfect for a summer lunch. With a homemade broccoli pesto bursting with flavor, this pasta is a great way to serve vegetables in a fun and tasty way.

200 grams whole wheat pasta

1 medium broccoli, cut into florets

2 cloves of garlic, peeled

50 grams Parmesan cheese, grated

50 grams pine nuts, toasted

4 tablespoons olive oil

salt and pepper to taste

Cook the pasta according to the instructions on the package.

While the pasta is cooking, steam the broccoli florets until tender, about 5-7 minutes.

In a food processor, combine the steamed broccoli, garlic, Parmesan cheese, pine nuts, olive oil, salt, and pepper. Puree until smooth.

Drain the pasta, reserving a cup of the pasta water.

Toss the pasta with the broccoli pesto, adding some of the reserved pasta water if needed to make it creamier.
