Ingredients

  • large cauliflower, cut into florets
  • onions, roughly chopped
  • cloves of garlic, minced
  • liter vegetable broth
  • 100 ml light cooking cream
  • tablespoons olive oil
  •  Salt and pepper to taste
  •  Handful of fresh parsley, chopped

Instructions

  1. 1 Heat the olive oil in a large pot over medium-high heat.
  2. 2 Add the onion and garlic and cook until soft, about 5 minutes.
  3. 3 Add the cauliflower florets and cook for another 5 minutes, stirring occasionally.
  4. 4 Add the vegetable broth and simmer for about 20 minutes, or until the cauliflower is tender.
  5. 5 Puree the soup with an immersion blender until smooth. Add the cream and mix well.
