Creamy Cauliflower Soup

1 large cauliflower, cut into florets

2 onions, roughly chopped

2 cloves of garlic, minced

1 liter vegetable broth

100 ml light cooking cream

2 tablespoons olive oil

Salt and pepper to taste

Handful of fresh parsley, chopped
Instructions

Heat the olive oil in a large pot over medium-high heat.

Add the onion and garlic and cook until soft, about 5 minutes.

Add the cauliflower florets and cook for another 5 minutes, stirring occasionally.

Add the vegetable broth and simmer for about 20 minutes, or until the cauliflower is tender.

Puree the soup with an immersion blender until smooth. Add the cream and mix well.
