Creamy Pasta with Roasted Pumpkin and Spinach
A warming dish full of flavor and nutrients, perfect for the cooler months. The roasted pumpkin makes the pasta deliciously sweet and creamy, while the spinach adds a boost of vegetables and color. Don't stress, it's easier than you think!

400 grams whole wheat penne

1 small pumpkin, diced

200 grams fresh spinach

2 cloves of garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

50 grams grated Parmesan cheese
Instructions

Preheat the oven to 200 degrees Celsius and line a baking sheet with parchment paper.

Spread the pumpkin cubes on the baking sheet, drizzle with 1 tablespoon of olive oil and season with salt and pepper. Roast the pumpkin in the oven until soft, about 25-30 minutes.

Meanwhile, cook the pasta according to the package instructions and reserve a cup of the cooking water.

Heat the remaining tablespoon of olive oil in a large pan over medium-high heat. Add the garlic and cook until golden brown.

Add the spinach to the pan and stir until wilted.

Add the roasted pumpkin, cooked pasta, and reserved cooking water to the pan. Mix everything well until the pasta is coated with the sauce.
