Ingredients

  • 400 grams whole wheat penne
  • small pumpkin, diced
  • 200 grams fresh spinach
  • cloves of garlic, minced
  • tablespoons olive oil
  •  Salt and pepper to taste
  • 50 grams grated Parmesan cheese

Instructions

  1. 1 Preheat the oven to 200 degrees Celsius and line a baking sheet with parchment paper.
  2. 2 Spread the pumpkin cubes on the baking sheet, drizzle with 1 tablespoon of olive oil and season with salt and pepper. Roast the pumpkin in the oven until soft, about 25-30 minutes.
  3. 3 Meanwhile, cook the pasta according to the package instructions and reserve a cup of the cooking water.
  4. 4 Heat the remaining tablespoon of olive oil in a large pan over medium-high heat. Add the garlic and cook until golden brown.
  5. 5 Add the spinach to the pan and stir until wilted.
  6. 6 Add the roasted pumpkin, cooked pasta, and reserved cooking water to the pan. Mix everything well until the pasta is coated with the sauce.
  7. 7 Add the grated Parmesan cheese, stir well and serve hot. It will turn out great!
