  • cups panko breadcrumbs
  • cup flour
  • eggs
  • ripe mango
  • small red chili pepper
  • tablespoons rice vinegar
  • tablespoon honey
  •  Salt and pepper to taste
  •  Olive oil for cooking

Instructions

  1. 1 Preheat the oven to 200 degrees and prepare a baking sheet.
  2. 2 Dip each chicken breast first in the flour, then in the egg, and then in the panko breadcrumbs. Place them on the baking sheet.
  3. 3 Bake the chicken for about 25 minutes in the oven, or until golden brown and crispy.
  4. 4 While the chicken is baking, make the sauce. Blend the mango, red chili pepper, rice vinegar, honey, salt, and pepper in a blender until smooth.
  5. 5 Heat the mango sauce in a small saucepan on the stove. Stir occasionally, and keep it warm until ready to serve.
