Crispy Chicken Breast with Spicy Mango Sauce
A delicious midweek meal, this crispy chicken breast is perfectly complemented by a super tasty, spicy mango sauce.
Ingredients

4 chicken breasts

2 cups panko breadcrumbs

1 cup flour

2 eggs

1 ripe mango

1 small red chili pepper

3 tablespoons rice vinegar

1 tablespoon honey

Salt and pepper to taste

Olive oil for cooking

Preheat the oven to 200 degrees and prepare a baking sheet.

Dip each chicken breast first in the flour, then in the egg, and then in the panko breadcrumbs. Place them on the baking sheet.

Bake the chicken for about 25 minutes in the oven, or until golden brown and crispy.

While the chicken is baking, make the sauce. Blend the mango, red chili pepper, rice vinegar, honey, salt, and pepper in a blender until smooth.

Heat the mango sauce in a small saucepan on the stove. Stir occasionally, and keep it warm until ready to serve.
