Crispy Quinoa Sushi Rolls
These tasty, handmade sushi rolls are filled with crispy quinoa, fresh vegetables, and creamy avocado. They are perfect for a healthy lunch, filling dinner, or impressive party snack. Don't stress if you've never made sushi before, this recipe makes it easy and fun!
Ingredients

1 cup quinoa

2 cups water

1/2 teaspoon salt

1 tablespoon rice vinegar

4 nori sheets

1 small cucumber, thinly sliced

1 carrot, thinly sliced

1 red bell pepper, thinly sliced

1 ripe avocado, thinly sliced

soy sauce, for serving

Rinse the quinoa under cold water and place it in a pan with the water and salt. Bring to a boil, reduce heat and let simmer for 15 minutes.

Remove the pan from heat, cover, and let the quinoa steam for another 5 minutes.

Stir the rice vinegar into the quinoa and let it cool.

Spread a quarter of the quinoa evenly over a nori sheet, leaving a 2 cm empty space at the top.

Place a strip of cucumber, carrot, bell pepper, and avocado on the quinoa, near the bottom of the sheet.

Roll the nori sheet tightly, starting from the bottom. Use a little water to moisten the top of the sheet and seal the roll.

Repeat with the remaining ingredients.

Slice each roll into 2 cm pieces and serve with soy sauce. Enjoy!
