Crispy Quinoa Sushi Rolls

Ingredients

  • cup quinoa
  • cups water
  • 1/2 teaspoon salt
  • tablespoon rice vinegar
  • nori sheets
  • small cucumber, thinly sliced
  • carrot, thinly sliced
  • red bell pepper, thinly sliced
  • ripe avocado, thinly sliced
  •  soy sauce, for serving

Instructions

  1. 1 Rinse the quinoa under cold water and place it in a pan with the water and salt. Bring to a boil, reduce heat and let simmer for 15 minutes.
  2. 2 Remove the pan from heat, cover, and let the quinoa steam for another 5 minutes.
  3. 3 Stir the rice vinegar into the quinoa and let it cool.
  4. 4 Spread a quarter of the quinoa evenly over a nori sheet, leaving a 2 cm empty space at the top.
  5. 5 Place a strip of cucumber, carrot, bell pepper, and avocado on the quinoa, near the bottom of the sheet.
  6. 6 Roll the nori sheet tightly, starting from the bottom. Use a little water to moisten the top of the sheet and seal the roll.
  7. 7 Repeat with the remaining ingredients.
  8. 8 Slice each roll into 2 cm pieces and serve with soy sauce. Enjoy!
