  • large sweet potatoes
  • can chickpeas (400g)
  • large onion
  • cloves of garlic
  • piece of ginger (2cm)
  • can peeled tomatoes (400g)
  • teaspoons curry powder
  • teaspoon turmeric
  • teaspoon cumin
  • teaspoon coriander
  • 200 ml coconut milk
  •  Olive oil
  •  Fresh coriander, finely chopped (for garnish)
  •  Naan bread or rice for serving

Instructions

  1. 1 Cut the sweet potatoes into cubes of about 2 cm.
  2. 2 Rinse the chickpeas under the tap.
  3. 3 Chop the onion and finely chop the garlic and ginger.
  4. 4 Heat some olive oil in a large pan and fry the onion, garlic and ginger in it.
  5. 5 Add the curry powder, turmeric, cumin and coriander and fry for a minute.
  6. 6 Add the sweet potato cubes, chickpeas and peeled tomatoes. Stir everything well.
  7. 7 Add the coconut milk and let the curry simmer gently for about 20 minutes, until the sweet potato is cooked.
