Delicious Vegan Curry with Sweet Potato

Ingredients

2 large sweet potatoes

1 can chickpeas (400g)

1 large onion

2 cloves of garlic

1 piece of ginger (2cm)

1 can peeled tomatoes (400g)

2 teaspoons curry powder

1 teaspoon turmeric

1 teaspoon cumin

1 teaspoon coriander

200 ml coconut milk

Olive oil

Fresh coriander, finely chopped (for garnish)

Naan bread or rice for serving

Cut the sweet potatoes into cubes of about 2 cm.

Rinse the chickpeas under the tap.

Chop the onion and finely chop the garlic and ginger.

Heat some olive oil in a large pan and fry the onion, garlic and ginger in it.

Add the curry powder, turmeric, cumin and coriander and fry for a minute.

Add the sweet potato cubes, chickpeas and peeled tomatoes. Stir everything well.

Add the coconut milk and let the curry simmer gently for about 20 minutes, until the sweet potato is cooked.
