Delicious Vegan Pad Thai with Tofu
This Vegan Pad Thai with Tofu is a delicious, healthy, and satisfying dish bursting with flavor! It is easy to prepare and perfect for a cozy evening with friends or family. This recipe is vegan, but still has the traditional flavors of Pad Thai. And you know what? It's easier to make than you think!

200 grams rice noodles

200 grams tofu, cubed

1 carrot, peeled and thinly sliced

1 red bell pepper, thinly sliced

2 spring onions, thinly sliced

2 cloves of garlic, minced

100 grams bean sprouts

4 tablespoons soy sauce

2 tablespoons peanut butter

1 tablespoon brown sugar

1 tablespoon lime juice

Olive oil

Optional: fresh coriander and peanuts for garnish
Instructions

Cook the rice noodles according to the package instructions.

Heat a splash of olive oil in a wok pan over medium-high heat. Add the tofu cubes and fry until golden brown. Remove them from the pan and set aside.

Add some more oil to the same pan and sauté the garlic, carrot, bell pepper, and spring onion for about 5 minutes.

Meanwhile, make the sauce by mixing the soy sauce, peanut butter, brown sugar, and lime juice.

Add the tofu and cooked noodles to the vegetables in the pan. Pour the sauce over it and mix everything well. Let it simmer for a few more minutes.

Add the bean sprouts at the last minute and stir a few times.
