Enchanting Blueberry Tofu Cheesecake
This delicious, creamy, and vegan cheesecake is a true treat! The combination of sweet blueberries and soft tofu is simply heavenly. The oat and date crust provides a crunchy bite. No stress! It's really easy to prepare. And did you know that blueberries are full of antioxidants? So not only does it taste delicious, it's also good for you!
Ingredients

200 g oats

100 g dates

2 tbsp coconut oil

400 g soft tofu

150 g blueberries

100 g coconut cream

70 g agave syrup

1 tsp vanilla extract

Instructions

Combine the oats, dates, and coconut oil in a food processor and mix until sticky.

Press the mixture into a cake tin and freeze.

In the same food processor, combine the tofu, blueberries, coconut cream, agave syrup, vanilla extract, and salt. Blend until smooth.

Remove the cake tin from the freezer and spread the tofu mixture over the crust.

Let the cheesecake set in the freezer for at least 4 hours.

Remove the cheesecake from the freezer 15 minutes before serving. Garnish with fresh blueberries and enjoy!
