Ingredients

  • large eggs
  • tablespoons milk
  • pinch of salt
  • pinch of pepper
  • tablespoons olive oil
  • onion, chopped
  • cloves of garlic, minced
  • 200 grams fresh spinach
  • 150 grams feta cheese, crumbled

Instructions

  1. 1 Whisk the eggs, milk, salt, and pepper in a bowl until well combined. Set aside.
  2. 2 Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until soft.
  3. 3 Add the spinach and cook until wilted. Spinach wilts very quickly!
  4. 4 Pour the egg mixture over the vegetables in the pan and sprinkle the feta cheese on top. Cover the pan and let the egg set. This will take about 5-7 minutes.
