Exotic Mango Coconut Parfait
This delightful parfait combines tropical fruit with creamy coconut milk and crunchy granola. It's the perfect dessert to end a special evening. And you know what the best part is? It's super easy to make, so no stress! This recipe is also vegan and gluten-free, a winner for everyone.

2 ripe mangoes

400 ml coconut milk

3 tablespoons agave syrup

1 teaspoon vanilla extract

200 grams gluten-free granola

Fresh mint leaves for garnish

1. Peel the mangoes and dice half of the flesh. Puree the other half in a blender until smooth.

2. In a bowl, mix the coconut milk, agave syrup, and vanilla extract. Stir well until everything is well combined.

3. Now for the fun part! Layer some granola at the bottom of four glasses. Spoon some mango puree on top, followed by a layer of coconut milk mixture. Repeat these layers until the glasses are full.

4. Place the glasses in the refrigerator and let them set for at least 2 hours. It will turn out great!
