Fantastic Fruit and Nut Energy Bars
These homemade energy bars are perfect as a snack, packed with delicious fruit and nuts, and will give you an energy boost when you need it. They are easy to make and can be stored in the fridge for a week. Super convenient for busy weekdays!
Ingredients

200 grams pitted dates

100 grams dried apricots

50 grams almonds

50 grams walnuts

2 tablespoons chia seeds

2 tablespoons honey

1 teaspoon vanilla extract
Instructions

1. Put the dates, apricots, almonds, walnuts, chia seeds, honey, and vanilla extract in a food processor and mix until the mixture sticks together.

2. Line a baking dish with parchment paper and spread the mixture evenly over the bottom. Press it down firmly with the back of a spoon.

3. Place the baking dish in the refrigerator for at least 2 hours to set.

4. Remove the baking dish from the refrigerator and cut the mixture into bars. Store them in an airtight container in the refrigerator. They will keep for about a week. Enjoy!
