Ingredients

  • large sweet potatoes
  • can chickpeas (400 grams)
  • large onion, finely chopped
  • cloves of garlic, finely chopped
  • tablespoon curry powder
  • teaspoon turmeric
  • 400 ml coconut milk
  • tablespoon olive oil
  •  fresh coriander for garnish
  •  salt and pepper to taste

Instructions

  1. 1 Peel the sweet potatoes and cut them into approximately 1 cm cubes.
  2. 2 Heat the olive oil in a large pan and add the onion and garlic. Cook until soft.
  3. 3 Add the curry powder and turmeric and stir well, let the spices cook for a minute.
  4. 4 Add the sweet potato cubes and cook for another 5 minutes, stirring regularly.
  5. 5 Add the chickpeas and coconut milk. Bring to a boil, reduce heat and let simmer for 20 minutes, or until the sweet potato is soft.
  6. 6 Season with salt and pepper, if needed. Garnish with fresh coriander before serving. Enjoy!
