Flavorful Vegan Curry with Sweet Potato and Chickpeas
A delicious nourishing and warming dish that is perfect for a healthy and cozy dinner. The sweet potato and chickpeas make for a deliciously filling meal, while the fresh herbs and spices provide an explosion of flavor. An absolute favorite among both adults and children!
Ingredients

2 large sweet potatoes

1 can chickpeas (400 grams)

1 large onion, finely chopped

2 cloves of garlic, finely chopped

1 tablespoon curry powder

1 teaspoon turmeric

400 ml coconut milk

1 tablespoon olive oil

fresh coriander for garnish

salt and pepper to taste
Instructions

Peel the sweet potatoes and cut them into approximately 1 cm cubes.

Heat the olive oil in a large pan and add the onion and garlic. Cook until soft.

Add the curry powder and turmeric and stir well, let the spices cook for a minute.

Add the sweet potato cubes and cook for another 5 minutes, stirring regularly.

Add the chickpeas and coconut milk. Bring to a boil, reduce heat and let simmer for 20 minutes, or until the sweet potato is soft.

Season with salt and pepper, if needed. Garnish with fresh coriander before serving. Enjoy!
