Ingredients

  • 200 grams quinoa
  • 400 grams canned corn, drained
  • 400 grams canned black beans, rinsed and drained
  • red bell peppers, diced
  • 250 grams cherry tomatoes, halved
  • red onion, finely chopped
  • avocado, diced
  •  juice of 2 limes
  • tablespoons olive oil
  • teaspoon cumin
  •  a handful of fresh cilantro, chopped
  •  salt and pepper to taste

Instructions

  1. 1 Rinse the quinoa under cold water and cook according to package instructions. Let it cool.
