Fresh and Colorful Mexican Quinoa Salad

Ingredients

200 grams quinoa

400 grams canned corn, drained

400 grams canned black beans, rinsed and drained

2 red bell peppers, diced

250 grams cherry tomatoes, halved

1 red onion, finely chopped

1 avocado, diced

juice of 2 limes

3 tablespoons olive oil

1 teaspoon cumin

a handful of fresh cilantro, chopped

salt and pepper to taste
Instructions

Rinse the quinoa under cold water and cook according to package instructions. Let it cool.

In a large bowl, combine the corn, black beans, bell peppers, cherry tomatoes, onion, and avocado.

Make a dressing by mixing lime juice, olive oil, cumin, salt, and pepper.

Add the cooled quinoa and dressing to the vegetables in the bowl and mix well.
