Fresh Greek Salad with Grilled Halloumi
This delicious Greek salad with grilled halloumi is a healthy and nutritious lunch. It is a party of different textures and flavors, where the crunchy vegetables perfectly complement the salty halloumi and the fresh lemon dressing.
Ingredients

1 head of romaine lettuce, washed and torn into pieces

2 large tomatoes, diced

1 cucumber, diced

1 red onion, thinly sliced

200 grams of halloumi cheese, sliced

1 handful of black olives

For the dressing:

Juice of 1 lemon

Mix all the ingredients for the dressing in a bowl and set aside.

Heat a grill pan over medium-high heat. Grill the halloumi slices on both sides until golden brown and crispy. This takes about 2-3 minutes per side. Be careful not to burn the halloumi!
