Instructions
1Preheat the oven to 180 degrees Celsius.
2Zest 2 lemons and juice all 4 lemons.
3In a saucepan, combine the lemon juice, lemon zest, sugar, eggs, and cornstarch over medium heat. Add the butter and continue stirring until the mixture thickens. Don't stress, this happens pretty quickly.
4Pour the lemon mixture into the pie crust and place it in the oven. Bake the pie for 10-15 minutes until the filling is set.
5Meanwhile, beat the egg whites until stiff peaks form. Gradually add the powdered sugar while continuing to beat until you have a stiff and glossy meringue mixture.
6Remove the pie from the oven and increase the temperature to 220 degrees Celsius.
7Spread the meringue over the pie and return it to the oven. Bake the pie for another 5-10 minutes until the meringue is golden brown. And voila, you have made a beautiful and delicious lemon meringue pie!
