200 grams of oatmeal cookies

100 grams of melted butter

500 grams of low-fat quark

200 ml of cream

3 tablespoons of honey

Zest and juice of 2 lemons

1 vanilla bean

10 grams of gelatin

200 grams of mixed berries

Crumble the oatmeal cookies and mix with the melted butter. Press this mixture into a cake tin to make the base.

Mix the quark, cream, honey, lemon zest and juice in a bowl.

Cut the vanilla bean lengthwise and scrape out the seeds. Add these to the quark mixture.

Soak the gelatin in cold water. Squeeze out the gelatin and dissolve in a saucepan with a little water. Mix the gelatin into the quark mixture.
