Ingredients

  • 200 grams Digestive biscuits
  • 100 grams unsalted butter, melted
  • 500 grams ricotta cheese
  • large eggs
  • 150 grams sugar
  •  Zest and juice of 2 lemons
  • teaspoon vanilla extract
  • 200 grams fresh blueberries

Instructions

  1. 1 Preheat the oven to 180 degrees Celsius.
  2. 2 Crush the Digestive biscuits and mix with the melted butter. Press this mixture into the bottom of a cake tin and bake the base for 10 minutes in the oven.
  3. 3 Mix the ricotta with the eggs, sugar, lemon zest and juice, and vanilla extract until smooth batter forms.
  4. 4 Pour the ricotta mixture over the prebaked base and bake the cake for 30 minutes in the oven.
  5. 5 Remove the cake from the oven and let it cool completely.
  6. 6 Garnish the cake with fresh blueberries before serving.
