Fresh Lemon Ricotta Cake with Blueberries

200 grams Digestive biscuits

100 grams unsalted butter, melted

500 grams ricotta cheese

Zest and juice of 2 lemons

Preheat the oven to 180 degrees Celsius.

Crush the Digestive biscuits and mix with the melted butter. Press this mixture into the bottom of a cake tin and bake the base for 10 minutes in the oven.

Mix the ricotta with the eggs, sugar, lemon zest and juice, and vanilla extract until smooth batter forms.
