Fresh Lemon Yogurt Tart
A light and airy lemon tart that is the perfect ending to a delicious meal. The combination of yogurt and lemon provides a refreshing flavor, and the oat and almond crust gives a delightful crunch. And the best part? It's easy to make!
Ingredients

For the crust:

200 grams rolled oats

100 grams almonds

2 tablespoons honey

60 grams unsalted butter, melted

For the filling:

500 grams Greek yogurt

120 grams sugar

3 large eggs

Zest and juice of 3 lemons

1. Preheat the oven to 180 degrees Celsius and line a tart pan with parchment paper.

2. In a food processor, pulse the rolled oats and almonds until coarsely ground. Add the honey and melted butter and mix well.

3. Press the oat mixture firmly into the tart pan, making sure to cover the sides as well. Bake in the oven for 10-15 minutes, until golden brown.

4. While the crust is baking, mix the yogurt, sugar, eggs, and lemon zest and juice in a bowl until smooth.

5. Remove the crust from the oven and pour the yogurt mixture over it. Return to the oven and bake for 30-35 minutes, until the filling is just set.
