Ingredients

  •  For the crust:
  • 200 grams rolled oats
  • 100 grams almonds
  • tablespoons honey
  • 60 grams unsalted butter, melted
  •  For the filling:
  • 500 grams Greek yogurt
  • 120 grams sugar
  • large eggs
  •  Zest and juice of 3 lemons

Instructions

  1. 1 1. Preheat the oven to 180 degrees Celsius and line a tart pan with parchment paper.
  2. 2 2. In a food processor, pulse the rolled oats and almonds until coarsely ground. Add the honey and melted butter and mix well.
  3. 3 3. Press the oat mixture firmly into the tart pan, making sure to cover the sides as well. Bake in the oven for 10-15 minutes, until golden brown.
  4. 4 4. While the crust is baking, mix the yogurt, sugar, eggs, and lemon zest and juice in a bowl until smooth.
  5. 5 5. Remove the crust from the oven and pour the yogurt mixture over it. Return to the oven and bake for 30-35 minutes, until the filling is just set.
