Fresh Mango Mousse with Coconut

Ingredients

  • ripe mangoes
  • can of coconut milk (400 ml)
  • sheets of gelatin
  • tablespoons of honey
  • sprigs of mint for garnish

Instructions

  1. 1 Soak the gelatin sheets in a bowl of cold water.
  2. 2 Meanwhile, peel the mangoes and cut the flesh into pieces.
  3. 3 Puree the mango pieces with an immersion blender or in a blender until smooth.
  4. 4 Heat the coconut milk in a saucepan over low heat. Add the squeezed gelatin sheets and honey and stir until the gelatin is dissolved.
  5. 5 Add the warm coconut milk to the mango puree and mix everything well.
  6. 6 Divide the mousse into 4 glasses or bowls and refrigerate for at least 2 hours to set.
