Fresh Pasta with Grilled Zucchini and Cherry Tomatoes

Ingredients

  • 400 grams fresh pasta
  • zucchinis
  • 250 grams cherry tomatoes
  • cloves of garlic
  •  Olive oil
  •  Salt and pepper
  •  Handful of fresh basil

Instructions

  1. 1 Slice the zucchinis into thin slices and cut the cherry tomatoes in half.
  2. 2 Heat a grill pan and grill the zucchini slices on both sides until they have nice grill marks. Remove them from the pan and set aside.
  3. 3 Use the same pan to grill the cherry tomatoes. Do this over medium heat until they are soft and slightly caramelized.
  4. 4 Meanwhile, cook the fresh pasta according to the instructions on the package.
  5. 5 Heat some olive oil in a large skillet and squeeze the garlic into it. Add the grilled zucchini and cherry tomatoes and mix everything well. Season with salt and pepper.
