Fresh Spinach Salad with Grilled Chicken, Feta and Raspberry Vinaigrette

Heat a grill pan over medium-high heat. Season the chicken breasts with salt and pepper and grill them for about 7 minutes on each side until cooked through. Let the chicken rest for a few minutes.

Meanwhile, make the vinaigrette by pureeing the raspberries, olive oil, balsamic vinegar, salt, and pepper in a blender or food processor. Taste and add more salt or pepper if needed.
