Fresh summer pasta with lemon and basil
A delicious, light pasta that is perfect for warm summer days. The combination of lemon and basil gives the dish a fresh taste, while the Parmesan cheese adds a savory touch.
Ingredients

200 g spaghetti

Juice and zest of 1 lemon

2 tbsp olive oil

2 cloves of garlic, minced

Handful of fresh basil leaves, chopped

50 g Parmesan cheese, grated

Salt and pepper

1. Cook the spaghetti according to the instructions on the package in salted water.

2. While the spaghetti is cooking, heat the olive oil in a large pan and add the minced garlic. Let it simmer for a few minutes until the garlic is golden brown.

3. Add the lemon juice and lemon zest to the pan. Let it simmer for a few minutes to let the flavors come together.

4. Drain the spaghetti, but reserve a little bit of the pasta water. Add the spaghetti to the pan and mix it well with the lemon-garlic mixture. Add a little pasta water if needed to make the sauce smoother.

5. Add the grated Parmesan cheese and chopped basil. Season with salt and pepper. Mix everything together until the cheese is melted and the pasta is well coated with the sauce.

6. Serve immediately, with some extra Parmesan cheese and basil on top. Enjoy!
