Fresh Vegan Spring Mash with Sweet Potato and Spinach

Peel the sweet potatoes and cut them into cubes.

Cook the sweet potatoes in a large pan with water and a little salt for about 15 minutes until tender.

Meanwhile, finely chop the onions and garlic.

Heat the olive oil in a wok pan and sauté the onions and garlic until translucent.

Add the spinach to the pan and stir-fry until wilted.
