Fruity Coconut Rice Pudding

Ingredients

  • 400 ml coconut milk
  • 150 gr basmati rice
  • tbsp honey
  • tsp vanilla extract
  • 75 gr blueberries
  • 75 gr strawberries
  • 75 gr mango
  •  a handful of fresh mint leaves

Instructions

  1. 1 Rinse the basmati rice under cold water.
  2. 2 Put the coconut milk in a pan and bring to a boil.
  3. 3 Add the rice to the boiling coconut milk. Stir well to prevent the rice from sticking to the bottom of the pan.
  4. 4 Reduce the heat and let the rice simmer for about 20 minutes, or until the rice is tender and the milk is absorbed.
  5. 5 Add the honey and vanilla extract to the rice and stir well.
  6. 6 Cut the fruit into pieces and mix it into the rice pudding.
  7. 7 Divide the pudding into 4 bowls and garnish with the fresh mint leaves. Enjoy!
