Fruity Coconut Rice Pudding
This fruity coconut rice pudding is a delicious way to get your daily dose of fruit while satisfying your sweet tooth. Made with creamy coconut milk and sweetened with honey, it's a healthier dessert option. It's also very easy to make, so no stress!
Ingredients

400 ml coconut milk

150 gr basmati rice

3 tbsp honey

1 tsp vanilla extract

75 gr blueberries

75 gr strawberries

75 gr mango

a handful of fresh mint leaves
Instructions

Rinse the basmati rice under cold water.

Put the coconut milk in a pan and bring to a boil.

Add the rice to the boiling coconut milk. Stir well to prevent the rice from sticking to the bottom of the pan.

Reduce the heat and let the rice simmer for about 20 minutes, or until the rice is tender and the milk is absorbed.

Add the honey and vanilla extract to the rice and stir well.

Cut the fruit into pieces and mix it into the rice pudding.

Divide the pudding into 4 bowls and garnish with the fresh mint leaves. Enjoy!
