Fruity Quark Cake with Strawberries and Mint
A refreshing, light dessert that perfectly rounds off your meal. This fruity quark cake with strawberries and mint is not only delicious but also super healthy. No stress, it's very easy to make. And the fun part is, you can endlessly vary with different types of fruit.

500 grams low-fat quark

200 grams whole wheat biscuits

100 grams unsalted butter

500 grams fresh strawberries

4 sheets of gelatin

2 tablespoons honey

fresh mint leaves
Instructions

Melt the butter in a saucepan.

Crumble the biscuits in a food processor and mix with the melted butter.

Cover a cake tin with parchment paper and spread the biscuit mixture over the bottom. Press firmly and refrigerate.

Soak the gelatin sheets in cold water.

Puree half of the strawberries in a food processor.

Squeeze out the gelatin sheets and dissolve in a saucepan with a little warm water.

Add the strawberry puree, quark, and honey to the gelatin and stir well.

Spread this mixture over the biscuit base and let set in the refrigerator for at least 3 hours.
