Ingredients

  • 200 grams quinoa
  • 400 ml water
  • 200 grams cherry tomatoes, halved
  • cucumber, diced
  • red onion, finely chopped
  • 100 grams black olives, pitted and halved
  • 200 grams feta cheese, crumbled
  •  For the dressing:
  • tablespoons olive oil
  •  Juice of 1 lemon
  •  Salt and pepper to taste

Instructions

  1. 1 Place the quinoa in a pan, add the water and bring to a boil. Once boiling, reduce heat and let the quinoa simmer for 15 minutes until all water is absorbed. Let it cool down.
  2. 2 While the quinoa is cooling, prepare the vegetables. Cut the cherry tomatoes, cucumber, red onion, and olives.
  3. 3 For the dressing, combine the olive oil, lemon juice, salt, and pepper in a small bowl and whisk well.
  4. 4 In a large bowl, mix the cooled quinoa, vegetables, crumbled feta, and dressing. Mix everything well together.
  5. 5 Serve the salad immediately, or store it in the refrigerator to serve later. Enjoy!
