Greek Quinoa Salad
This delicious and nutritious Greek quinoa salad is perfect for a healthy lunch. Packed with fresh vegetables and finished with a simple lemon-olive oil dressing. Bonus: it's both vegan and gluten-free!
Ingredients

200 grams quinoa

400 ml water

200 grams cherry tomatoes, halved

1 cucumber, diced

1 red onion, finely chopped

100 grams black olives, pitted and halved

200 grams feta cheese, crumbled

For the dressing:

3 tablespoons olive oil

Juice of 1 lemon

Salt and pepper to taste

Place the quinoa in a pan, add the water and bring to a boil. Once boiling, reduce heat and let the quinoa simmer for 15 minutes until all water is absorbed. Let it cool down.

While the quinoa is cooling, prepare the vegetables. Cut the cherry tomatoes, cucumber, red onion, and olives.

For the dressing, combine the olive oil, lemon juice, salt, and pepper in a small bowl and whisk well.

In a large bowl, mix the cooled quinoa, vegetables, crumbled feta, and dressing. Mix everything well together.
