Grilled Salmon with Sweet Potato Puree and Steamed Broccoli
An easy and healthy recipe that is perfect for a weeknight dinner. The salmon is full of flavor and perfectly grilled, the sweet potato puree is creamy and sweet, and the steamed broccoli adds that much-needed crunch and green color. It's a winner!

4 salmon fillets

4 medium sweet potatoes

1 large broccoli

Preheat the oven to 200 degrees Celsius.

Peel the sweet potatoes and cut them into cubes. Boil them in a pot of water until soft.

While the sweet potatoes are cooking, rinse the salmon fillets and pat them dry. Brush them with 1 tablespoon of olive oil, salt, and pepper.

Place the salmon fillets on a baking sheet and bake in the preheated oven for 12-15 minutes.

Drain the cooked sweet potatoes and mash them with a fork or potato masher. Add the remaining olive oil, salt, and pepper.

Steam the broccoli until bright green and just tender.
