Healthy Blueberry Pancakes
These delicious and healthy blueberry pancakes are a fantastic way to start a cheerful morning. They are light, fluffy, and packed with antioxidants thanks to the fresh blueberries. And best of all, they are super easy to make!
Ingredients

200 g whole wheat flour

2 teaspoons baking powder

Pinch of salt

2 tablespoons honey

2 large eggs

300 ml skim milk

1 teaspoon vanilla extract

200 g fresh blueberries

Olive oil or butter for cooking

Optional: extra honey or maple syrup for topping
Instructions

In a large bowl, mix the whole wheat flour, baking powder, and salt.

Add the honey, eggs, skim milk, and vanilla extract and mix until smooth batter forms.

Stir in the fresh blueberries.

Heat a little olive oil or butter in a skillet over medium heat.

Pour about a quarter cup of batter into the skillet for each pancake. Cook until the top of the pancake becomes bubbly and the edges feel set, about 2-3 minutes. Flip the pancake and cook until the other side is golden brown.

Serve the pancakes warm with extra honey or maple syrup if desired. Enjoy!
