Ingredients

  • 200 g whole wheat flour
  • teaspoons baking powder
  •  Pinch of salt
  • tablespoons honey
  • large eggs
  • 300 ml skim milk
  • teaspoon vanilla extract
  • 200 g fresh blueberries
  •  Olive oil or butter for cooking
  •  Optional: extra honey or maple syrup for topping

Instructions

  1. 1 In a large bowl, mix the whole wheat flour, baking powder, and salt.
  2. 2 Add the honey, eggs, skim milk, and vanilla extract and mix until smooth batter forms.
  3. 3 Stir in the fresh blueberries.
  4. 4 Heat a little olive oil or butter in a skillet over medium heat.
  5. 5 Pour about a quarter cup of batter into the skillet for each pancake. Cook until the top of the pancake becomes bubbly and the edges feel set, about 2-3 minutes. Flip the pancake and cook until the other side is golden brown.
